Extra Light and Fluffy Blueberry Pancake

Now is a blueberry season as you can find blueberry at most supermarket. I used the berries to make pancakes. This pancakes recipe is marvelous. The pancakes were actually EXTRA LIGHT and FLUFFY. It has the melt-in-your-mouth feeling. TO make the pancakes even more wonderful,I make it crispy!

The trick to making crispy pancakes is using more oil/butter to cook the pancakes. The oil need to be hot before dropping the batter on the pan. Therefore the edges of the pancakes would be crispy. Now I know how certain pancakes restuarants make their pancakes!



Ingredient

1 cup sifted all-purpose, pastry, or cake flour (I use cake flour)
1/8 teaspoon salt
1/2 tablespoon baking powder
2 egg yolks
3/4 cups milk, more or less
4 tablespoons butter, melted
2 egg whites
1 tablespoon sugar

Note: I added a handfull of blueberry


Directions

1. Sift the dry ingredients together.
2. In another bowl, mix the yolks, most of the milk, and the melted butter together until smooth.
3. Make a well in the middle of the dry ingredients and add the mixed wet ingredients all at once. Stir until just combined. (Over-mixing will make for a tough pancake.)
4. Beat the egg whites until light and fluffy and soft peaks appear as for meringue. Add the sugar toward the end of the beating. Fold the egg whites gently into the batter with a spatula. Add milk as necessary to get the right consistency.
5. Cook as you would other pancakes.

Note: The consistency should be like honey

I placed some fresh berries on the pancakes and drizzle it with some homemake condensed milk. The result...so rich and yummy, with a hint of very berry flavour.

Condensed Milk

125 g butter
2 cup sugar
1 cup boiling water (hot)
3 cup milk powder (or 4 cup depending on the thickness you desire)

Put sugar , butter and water in a blender.
Blend while gradually pour in Milk powder.

Once cool down the batter will thicken slightly.

It taste better than commercial condensed milk. I used the condensed milk to make pan cakes and Steamed Sponge Cake

Pancake (recipe from cooks united.co.uk with slight alteration.)

200g self rising flour
1 tsp salt
3 medium egg, separated
200ml condensed milk diluted with 200ml water (if the batter is too think you can add more water)

Mix together flour and salt.
Beat egg white and set aside
Beat egg yolk, then add condensed milk and beat until smooth
Combine egg yolk mixture with dry ingredient and beat until dmooth. Fold in Egg white.

Enjoy...fluffy and rich pancakes!

Pancakes

Pancakes, an easy and fast breakfast that the two M's love (especially the chocolate chips parts!)

Chocolate Chips Pancakes
7 tablespoon Self-raising flour
1 Egg
200ml-250ml Milk (depends on how thick or thin you like the batter)
2 Tbsp Olive Oil (or any oil of your choice)
A handful chocolate chips



1) Mix Flour with egg




2) Slowly add in milk until desired consistency



3) Add in Olive Oil

4) Mix in Chocolate Chips




5) Pour one ladle of the batter onto a hot, grease flat pan. Cook until a little dry at the edge and browned before flipping over and brown the other side.

Tada...

Make around 7 pancakes



It taste even better when spread some butter over it or if you have sweet tooth, butter with some honey or icing sugar...
