Sweet Crepe Batter

What I did was stacked the crepes and spread each layer with a thin spread of Nutella. I topped it off with warmed diluted Nutella (double boiled 3 tablespoons of Nutella with 1 tablespoon of milk). This was so yummy! Next time I would add slice bananas to it.

I didn't rest the batter in the fridge as suggested (coz I couldn't wait that long). Therefore the surface of crepes were not smooth. But does ot matter when it was covered with Nutella?


SWEET CREPE BATTER


Ingredients

2 eggs
1 cup milk
1/4 cup water
2 teaspoons vanilla
1 cup all-purpose flour
2 tablespoons sugar
2 tablespoons melted butter
Makes about 20 crêpes

Place all the ingredients in a blender and blend until smooth. If you don't have a blender, whisk the eggs, milk, water, and vanilla together in a bowl until smooth. Add the flour and sugar and whisk to combine. Whisk in 2 tablespoons of the melted butter. Strain the batter into another bowl. Cover with plastic wrap and place in the refrigerator for at least an hour to allow all the air bubbles to settle.

Heat a small crêpe pan (or nonstick skillet) over medium high heat. Swirl 1 teaspoon of butter in the pan and add a small amount of batter to the pan--swirl the pan so that the batter evenly and thinly coats the bottom. Cook for about 30 seconds (until lightly browned) and flip. Cook for another 10-15 seconds and remove to a plate.

Continue cooking the rest of the batter, adding additional butter every third crêpe or so. Place the crêpes on a sheet tray and keep warm in a 225 degree F oven until ready to serve.

Cornflakes Cookies

There are many cornflakes cookies recipe. I picked this one because it has milk powder in it. The result wasn't dissapointing. The cookies were cruncy and the milky taste was there. What I did was lessen the flour by one tablespoon and a increase the milk powder by one tablespoon. Next time I would probably add some pecan nut to it.

A word of caution, know your oven well! It seems like the cookies get burned easily. The first batch was not far from burnt when I baked for 25 minutes. The second batch was baked for 15 minutes and came out just nice.




Ingredients:
120g Butter
80g Icing sugar, sifted
1 Egg Yolk
1/2tsp Vanilla Essence
120g Flour, sifted
30g Cornflour, sifted
30g Milk Powder, sifted
100g Cornflakes
Method:
1. Cream butter and icing sugar till light and fluffy. Beat in egg yolk and
vanilla.
2. Fold sifted flour mixture into butter mixture.
3. Drop mixture teaspoon by teaspoon onto the cornflakes.
4. Shape into balls and place into small coloured paper cups.
5. Bake in a pre-heated oven at 170 degree Celsius for 20-25 minutes till (I
baked for 15 minutes)
golden brown. When cool, store in air-tight container

Simple Steamed Carrot Cake.

I got this recipe from http://www.nibbledish.com/people/Joesze/recipes/modified-carrot-cake. Thank you for the wonderful recipe.

It doesn't has the usual spiced aroma of carrot cake of course, but it is light, soft, and delicious in its own way.

What I did was turned it into cup cake and steam it for 15 minutes. The recipe below can make around 6 cupcakes. I continue by whipping up some cream cheese frosting and swirled it on top. Haha! So much for the healthy cake!

Ingredients
1/3 to 1/2 cup sugar *
1/3 cup corn oil *
2 eggs *
1 cup shredded carrot *
1/2 cup raisins *
1 cup self-raising flour **
3/4 tsp salt **

How to make Modified Carrot Cake


STEAMED carrot cake WITHOUT cinnamon, baking powder, vanilla extract..& whatsoever ingredients u normally find in a carrot cake..this sounds a little funny, but suprisingly, it turned out well. Simple yet nice & healthy.

1st, mix all the ingredients marked with * until well-blended. Next, mix the ingredients marked with ** in a paper plate before adding slowly to the 1st mixture. Stir altogether & mix well. Pour into a cake pan & steam for about 35mins. Cut when cool.


Cream Cheese Frosting
250g Cream Cheese (room temperature)
100g-125g Butter (room temperature)
1 tsp Vanilla essence
Icing powder to your taste (I put in around 5 Tbsp, therefore not too sweet)

Using a mixer, creamed the cream cheese and butter until light.
Add in icing sugar until your desired sweetness

First day at School - Big M

Having spent 2-3years at kindy, and the 2 weeks tuition class in December, Big M do not have any problem in his official 1st day in Standard 1. He can fit right in and started playing with his new found friend.

Hahaha! just one incident. During the orientation one day before school starts, a teacher took the class around the school and parents waited at the classroom and fill up forms. When the group came back, all the chikdren were around except Big M. I asked the teacher 'Where is my son?"

Well, the teacher panicked and headed out to look for him. Luckily after a while, Big M saw me and walk towards me. Apparently, half way through the tour, he has joined other group!

Small M First Day of School

First day of school for Small M. Yes, I have enrolled him into kindergarten year 4 at Tadika Wawasan Melody. He was full of anticipation that he couldn't wait for the school to start. He was the first one to enter the class.

His excitement started to turn to fear when some other kids need to be peeled off from their parents and start screaming and crying their heart out.

He walked to the window and told me he wanted to go home, and started to make sure that I was within his sight. I felt that it was better for me to leave at that time. I told him I need to go to work and would come back for him soon. He waved me goodbye.

When I came back for him, He was sitting very quietly with his hankerchief in his hand and wipe his face when his tears tickle down. When he saw me he broke into visible cries...

Of course he told me he dont want to go to school anymore, but I managed to bribe him, saying that I would wait for him at home tomorrow and would bring him for ice-cream. It works and he say "Didi happy liow lor..." Hahaha!

Well, after the second day, he actually like going to school again, eventhough he told me he still cry a bit!
